fall food

Tonight I got home from work and immediately started cooking. I've been wanting to cook every meal lately (that does not mean I have!) I think it is the fall season in the air (not really in phx, but in my head) and the hope of cooler days when I can eat soups oatmeal and sip hot cocoa. my friend who watches gretta on wednesdays now brought us some fall treats last night. pumpkin ginger muffins and homeade herbal chai tea. I was in heaven and quickly realized this friend and i need to share ideas in many subjects (cooking, sewing, running and clothes). she even hand sewed the tea bags and attached little hearts onto the end of the strings. i think i love her.

I also want to wear sweaters. Really bad. But that's beside the point.

I started cooking tonight and didn't know what I was going to end up with since we didn't have too many ingredients.. Amazingly it was Super delicious and healthy!

My Made Up White Bean Chili:

First I put onion, green onion and cilantro in the food processor and made it really finely diced. Then I put a can of organic kidney beans, organic white northern beans, and a can of vegetable broth in the chili pot and simmered it up. I cut up some celery and added it to the pan with the onion medley. Both cooked for about 10 minutes separately and then I put them together. Add Cumin, Chili Powder, Red Pepper Flakes, Salt and Pepper and VOILA! Delicious chili in about a half hour.

I also made vegan chocolate chip cookies (oops)...click here for the recipe.

Love Mollie

  1. I totally agree! I have not had a desire at all this summer to make dinner, and all of the sudden I want to. It's amazing what cooler weather can do! I love you two gals, wish I could see you more!
